In the microwave:
Melt butter in large glass measuring cup.
Whisk in flour & cook gently – about half power for 30-40 seconds.
Slowly add milk, whisking continuously.
Return to micro, removing to whisk several times – after 90 sec. then 60, then 40 - until sauce has thickened.
Fresh garlic can be added to butter before melting.
Various spices – salt, pepper, mustard powder, herbs – can be added with flour.
1/8 cup wine per 1 cup milk can be added with milk – white wine for white sauce, red wine for blush sauce.
