Any quesadilla recipe works as a pizza.

Our Yule tradition – pesto, lightly steamed broccoli, old or extra old cheddar, halved cherry tomatoes.

Herbed cream sauce (give it a shot of white wine), lightly cooked asparagus, red pepper strips and an aggressive cheese.

Cream sauce (perhaps as above), lightly steamed cauliflower, red pepper strips or tomato for colour, medium-aged gouda.

Sauté 1 cup chopped onion in 2 Tbl oil with 3 minced garlic cloves, 1 1/2 tsp ground cumin, 1 tsp ground coriander and 1/4 tsp cayenne until onions are translucent. Add a smallish-chopped green pepper, 1 chopped tomato and 2 c corn. Spread over crust – with or without tomato sauce – and sprinkle with jack cheese.

Pesto, sun-dried tomatoes, portabellos, brie…. perhaps artichokes … pile on as many other exotic ingredients as you can think of.

Go Greek with tomato sauce, sautéd onions and spinach, oregano, artichokes, tomatoes and feta. Black olives?
