Start this early in the day - it needs to simmer a long time. Stir frequently.
3 cups dry green spits
about 7 cups water (more if needed)
1 bay leaf
2 tsp salt
Simmer covered 3-4 hours. Remove bay leaf.
Saute in 2 Tbl oil:
1 cup minced onion
3 garlic cloves, crushed
1 cup minced celery
1 small potato, thinly sliced
2 cups sliced carrots
If necessary, add a little water to steam. When tender, add to soup. Continue simmering.
About 15 minutes before serving add:
1/4 cup dry red wine
1/4 tsp dry mustard
1/4 tsp thyme
a few drops sesame oil (I think we used dark sesame oil)
Just before serving:
3 Tbl vinegar
1 cup chopped tomatoes
1/4 cup chopped fresh parsley
