2 medium ripe mangoes, peeled and chopped
1 small cucumber, peeled, seeded and diced
1 ripe tomato, shopped
juice of 1 lime
pinch of salt
1/2 – 1 small fresh chile pepper, minced or Tabasco
1 Tbl fresh cilantro, chopped (optional)
Mix all ingredients in serving bowl. Let salsa sit for 10 minutes to allow the flavours to blend before serving. Will keep refrigerated for 2-3 days.
