A quick summer lunch or supper. The main ingredients are the dressing and feta. Vegetables are flexible.
Red, yellow and/or green peppers (a mixture is nice)
Cucumbers
Green or red onions
Avocado
Tomatoes
Crumbled feta
Pita or wraps
Wisk together equal amounts of olive oil and freshly squeezed lemon juice, pressed garlic, oregano, salt and pepper. Pour over vegetables and feta and mix to coat.
Stuff into a pita or a wrap.
