10 oz fresh spinach, rinsed, stemmed & coarsely chopped

1 Tbl olive oil

1/2 cup scallions or green onions

1 Tbl chopped fresh dill (1 tsp dried)

1 cup crumbled feta cheese

1 cup ricotta cheese

dash of ground black pepper

2 tomatoes, thinly sliced or 6 cherry tomatoes, halved

Sauté spinach in the oil on high heat fro several minutes until just wilted. Drain the cooked spinach in a colander or sieve, and press out any excess moisture with the back of a large serving spoon. In a large bowl, combine spinach, scallions, dill, feta, ricotta and pepper. Spread topping on pizza crust and top with tomatoes. Bake following instructions given for your crust.
