A quick fix for meat-and-potato meals or the simplest tofu burger ever.
1 lb. Tofu
2 tsp vegetable oil
2 Tbl tamari
dash of Tabasco
4 drops dark sesame oil
Fold a clean tea towel or paper towel and ‘sandwich’ tofu between layers. Place a plate or small cutting board on top and weight with a can or two. Allow tofu to press 10 minutes (or until other ingredients are ready).
Stir together oil, tamari, Tabasco and sesame oil and set aside.
Artfully cut tofu 1/2 inch slices… squares, rectangles, or triangles. Place on broil-proof pan. (Glass baking pans don’t do well under broiler. Better to use metal.) Pour the marinade over the tofu and broil for about 5 minutes on each side, until bubbly, browned and crisp
